Our Process

Each of our products starts with the highest quality ingredients whether
it isCalifornia figs for our Mahia or organic grain raised in upstate NY for our
Legs Diamond whiskey. grain-big

Prior to fermentation we then either crush our figs with water (we do this process three times) or mash our rye.

Once the fermentation process is complete the mash goes into the still where we carefully make the proper cuts for heads, hearts (theĀ  good stuff) and tails.

Following distillation we blend the alcohol with filtered water and finally get the Mahia and whiskey ready to bottle and finally shipped to a retailer near you.
